Thanks, great recipe once again! I made these today, along with pine nut cookies (similarly bound with 3 egg whites) and rosemary citrus cookies (made with cornmeal and lemon zest) for tomorrow’s excursion to the in-laws. Unless I eat them all tonight…

Lindsay, I used unsweetened, finely shredded and dehydrated (which is desiccated) coconut.
