hey! love these pics. would you be willing to resubmit this to tastespotting with the picture cropped to 250×250, exactly as you would want to see it? (for some reason, when it was submitted, the photo got cropped to a weird place) would love to see this on the front page!

i tried pineapple coconut cookies ,they turned out really good,can’t stop eating them….
my whole family love those cookies.

Dragon, I found the bowl in a local kitchenware store. I live in Vancouver, BC.
Jessica, they are similar to coconut macaroons, but much better :)

Thanks, great recipe once again! I made these today, along with pine nut cookies (similarly bound with 3 egg whites) and rosemary citrus cookies (made with cornmeal and lemon zest) for tomorrow’s excursion to the in-laws. Unless I eat them all tonight…

You were right! These are so good! The tartness of the pineapple goes well with the sweetness of the coconut.
